Chocolate Chip Muffins

We have these for breakfast at least 2 or 3 times a week, they are quick, tasty, and easy.  You can also subtract the chocolate chips and add blueberries, or other fruits and veggies like sweet potatoes. 

Ingredients: makes 24 regular sized muffins.

2 eggs

2/3 cup oil

2/3 cup white sugar

2/3 cup brown sugar

2 teaspoon salt

2 tablespoon baking powder

1 tablespoon vanilla

2 cups milk

2 cups white flour

2 cups wheat flour

2 cups chocolate chips

optional:

1 cup sour cream

1 cup chopped walnuts 

Mix all the wet ingredients together in a medium bowl.  Add the dry ingredients.  Mix well.  Add the chocolate chips and walnuts if desired. Bake for 15 minutes at 345F or until golden brown.

  1. Kori, I sat down tonight and browsed through your web site or blog (I'm not too good at computer lingo). I am really impressed , very nicely done. Lots of good recipes that I'll have to try. Angie ate at your house one night and came home raving about the red beans and how good they were, I'll have to try the recipe. Good job, not only a FANTASTIC fiddle and guitar player and good cook, but creative as well. Thanks for the invite to check it out.
